Can I process one collection only?
Yes. Choose Specific Collections in the first step, then tick the collection on Choose Specific Items. Only its products are processed.

Yes. In New Task, pick Specific Collections under Product Selection, then search for and tick the collection on Choose Specific Items.
Every product in that collection is included. This is also the best way to split a large catalog into reviewable batches.
